Chefs' Forum Academy Blog 2 - Game masterclass with Kuba Winkowski
This week Level 3 catering students from our Cheltenham and Forest of Dean Campuses were lucky enough to have a game masterclass with Kuba Winkowski, Head Chef at the 3 AA Rosette award winning Feathered Nest Inn. The Cotswold restaurant serves a modern British food and game is heavily featured on the menus.
During the masterclass, students learned about game and its seasons, working in pairs under the watchful eye of kuba. They prepared venison, rabbit, duck and pheasant to make a layered game terrine, also gaining an insight into marrying correct herbs and spices with the game.
Kuba demonstrated various garnishes that could be used with the terrine including pickled golden and purple beetroot, which will be featured in future menus at Number ONE Restaurant; our student run restaurant at Cheltenham Campus.
The students were engaged throughout the class and came away feeeling very positive about the experience. We're all looking forward to Kuba’s return on 6 February, when he will be showing students how to prepare, cook and finish a game main course.
