Ideal if: you want to specialise in Patisserie and Confectionery and finesse your skills and experience to succeed in the catering and hospitality industry.

You’ll learn: gastronomy, supervising food safety, and preparing and cooking a range of technical dishes from a range of desserts though to petit fours.

Expect: a practical and demanding course in which you will be expected to work to industry standards with technical expertise.

You'll love: attending trade shows looking at some of the countries top patisserie chefs. 

Training to become a chef, our full time level 3 course will take your skills to a professional level and allow you to specialise your training.

The Patisserie and Confectionery qualification will help you develop advanced skills and techniques to produce patisserie products, for example fine desserts and pastries. 

The topics that will be undertaken develop advanced skills and techniques in producing:

  • dough and batter products
  • petits fours
  • pastry products
  • hot, cold and frozen desserts
  • cakes and sponges
  • display pieces and decorative items
  • Supervising staff
  • Food safety supervision
  • Exploring gastronomy

Students who are 18 or over on the 31 August prior to their enrolment academic year should check fee costs with student services. Learner Loans will be applicable for some learners.

 

  • Typical Entry Criteria

    • A full level 2 qualification in the relevant subject must be completed

      • Any relevant Level 2 qualification must be translatable to the current qualification structure delivered and verified by the College

    Gloucestershire College welcome any other/combinations of relevant qualifications that are comparable and/or equivalent to the typical course entry requirements.

    Applicants that do not have recognised qualifications may still meet course entry requirements through alternative methods of assessment at the College’s discretion.

    All queries regarding course entry criteria including the equivalency of qualifications and exceptional extenuating circumstances should be directed by email to the Admissions Department through applications@gloscol.ac.uk.

    A Level 2 qualification in patisserie must be completed before progressing onto the Level 3 programme.

Catering and hospitality is a thriving industry in Gloucestershire, across the UK and around the globe, offering a range of exciting opportunities. From hotels, restaurants and cruise ships to holiday parks, contract catering and more, the opportunities are endless and include roles such as chefs, sommeliers, hotel managers and front-of-house staff through to event managers, marketing and public relations.

GC has fantastic links with local and regional employers, which allows students to attend masterclasses with some of the best professionals in the industry. You will gain relevant industry experience by working at GC’s commercial restaurants, which include The View Restaurant at our Forest of Dean Campus, and Number One Restaurant at our Cheltenham Campus.

You’ll also get plenty of real-world experience attending and running events around the county, which may include large functions and corporate events.
