Ideal if: you want to specialise in a particular industry area and finesse your skills and experience to succeed in the catering and hospitality industry.

You’ll learn: gastronomy, sustainability, supervising food safety, and preparing and cooking a range of technical dishes.

Expect: a practical and demanding course in which you will be expected to work to industry standards with technical expertise.

This course is aimed at applicants that have successfully completed a Level 2 Diploma in Professional Cookery or who can demonstrate a good standard of industry experience comparable to level 2

The Level 3 Diploma in Professional Cookery is aimed at learners who are want to achieve a high skill level and really increase their chances of a successful career in the hospitality industry

The following topics are covered within this qualification through a variety of practical skills sessions and theory based topics:

  • Cook and finish complex fish dishes
  • Cook and finish complex meat dishes
  • Cook and finish complex poultry dishes
  • Maintain food safety when preparing, storing and cooking food
  • Develop productive working relationships with colleagues
  • Health, hygiene, safety and security
  • Prepare, cook and present fresh pasta dishes
  • Prepare, finish and present cold desserts
  • Complex hot sauces, dressings and cold sauces

 

This one year course is full time and involves a combination of practical and theory classes. Students will further develop their skills by cooking and serving customers in the college training restaurants.

The course includes masterclasses from some of Gloucestershire’s finest chefs, trips to hospitality businesses and taking part in exciting enrichment activities

The qualification you will study is the City and Guilds Level 3 NVQ Diploma in Professional Cookery

The assessment on this course will be through a mixture of practical tasks and short answer tests. During the programme you will complete a logbook showing what you have produced and you'll have practical assessments.

There are currently a wide variety of employment opportunities in the hospitality industry and achievement of this qualification will help to kick-start your career. Many learners progress onto the Level 3 Diploma in Patisserie which takes your skills to a more specialist level

Students who are 18 or over on the 31 August prior to their enrolment academic year should check fee costs with student services. Learner Loans will be applicable for some learners.

 

  • Typical Entry Criteria

    • A full level 2 qualification in the relevant subject must be completed

      • Any relevant Level 2 qualification must be translatable to the current qualification structure delivered and verified by the College

    Gloucestershire College welcome any other/combinations of relevant qualifications that are comparable and/or equivalent to the typical course entry requirements.

    Applicants that do not have recognised qualifications may still meet course entry requirements through alternative methods of assessment at the College’s discretion.

GC has fantastic links with local and regional employers, which allows students to attend masterclasses with some of the best professionals in the industry. You will gain relevant industry experience by working at GC’s commercial restaurants, which include The View Restaurant at our Forest of Dean Campus, and Number One Restaurant at our Cheltenham Campus.

You’ll also get plenty of real-world experience attending and running events around the county, which may include large functions and corporate events.
