Chefs' Academy Blog 3 - Daniel Moon Masterclass in Asian Fusion

Level 3 Catering students from our Cheltenham and Forest of Dean Campuses took part in a masterclass with Chef Daniel Moon this week. Daniel is Head Chef at The Gainsborough Hotel in Bath Spa and has achieved numerous awards and accolades, including three AA Rosettes and The Caters' Acorn Award. Led by Daniel, The Gainsborough is striving to obtain its third AA Rosette.

Using the best locally sourced produce, Daniel introduced the students to the new concept of Asian fusion cooking. They had the opportunity to learn how to prepare and cook one of his signature dishes, Creedy Carver Duck with Confit duck leg spring roll, dressed with plum purée and sesame seeds.

Chef Lecturer, Mark Hyde-Catton said: "It was a delight to see the students making the most of the experience of working with a leading industry chef, helping them to enrich their learning experience at Gloucestershire College."

Daniel is returning on the 27th February when he will be showing the students how to prepare and Cook one of the hotel's desserts.
